| Summary, etc. | En la actualidad, las enfermedades cardiovasculares, cerebrovasculares y el cáncer son las principales causas de muertes en la civilización occidental; ante el estrés oxidativo, el organismo debe responder con una defensa antioxidante extra, ya que dicho estrés puede causar la muerte de la célula. En las frutas y las legumbres se encuentran muchas sustancias capaces de atrapar radicales libres (responsable de diferentes tipos de daño celular), mejorando nuestra defensa antioxidante; numerosas investigaciones epidemiologicas y estudios experimentales han demostrado que el aumento en su consumo ayuda en la prevención de muertes por estas enfermedades, este efecto beneficioso se atribuye principalmente a sustancias con actividad antioxidante, como los compuestos fenólicos, ácido ascórbico, carotenoides, entre otro compuestos, sugiriendo que estas sustancias aumentan la defensa antioxidante del organismo. |
