Summary, etc.	Este texto se realizo con la finalidad de prolongar su tiempo de conservación, pulpa refinada de palta variedad Hass fue tratada con antioxidantes ( mezcla de ácido cítrico y ácido ascórbico) y envasada al vacío y sin vacío, luego de lo cual fue almacenada en congelación (-18 ºC) durante 150 días. Al inicio y durante el almacenamiento se determinó la actividad enzimática de la polifenoloxidasa (PFO) y se evaluó el color de la pulpa en base al sistema de coordenadas de cromaticidad L, a y b. Durante el almacenamiento se evaluó también el pH y las características sensoriales. Se encontraron altas reducciones de actividad de la PFO cuando el ácido cítrico y el ácido ascórbico fueron adicionados como aditivos. El puré con alta disminución de la actividad de la PFO fue menos sensible al cambio de color, el que se manifestó por la pérdida de la luminosidad original y el verdor de la pulpa. Los aditivos utilizados fueron los factores que más evitaron las reacciones de pardeamiento.
