| Summary, etc. | Las emulsiones de por si son sistemas complejos en la que una serie de su mecanismo físico químico entran en juego, son sistemas inestables y tienden a su desestabilización en el transcurso del tiempo. La presencia de aceite de pescado en las emulsiones complica su estabilidad no solo física si no oxidante dado que el aceite de pescado se oxida fácilmente. Sin embargo el aceite de pescado por sus características conocidas son ricas en ácidos grasos polinsaturados en especial el ácido graso eicosapentenoico (EPA) y docosahexenoico (DHA) de reconocidas propiedades en la nutrición y dietoterapia para diversos males que aquejan a la salud; nutricionalmente son necesarios para mantener el adecuado balance energético entre el ácidos grasos omega 6 y omega 3, así mismo son fundamentales en la etapa de formación fetal del recién nacido y contribuyen a la buena formación del sistema visual y neurológico. Estas propiedades hacen importante el estudio del uso de aceite de pescado en la preparación de emulsiones alimentarias. En tal sentido en esta tesis se evalúan diversos factores que influyen en la estabilidad no solo física de la emulsión si no también oxidativa con la finalidad de obtener emulsiones relativamente mas estables. Se utilizo en la preparación de emulsiones aceite desodorizado de anchoveta cuya finalidad oxidativa fue tambien evaluada. |
