| Summary, etc. | Esta obra nos presenta los conocimientos actuales sobre el impacto de la congelacion en la calidad de la carne, especialmente sobre sus caracteristicas organolepticas.Despues de una introduccion sobre los principios basicos y de la descripcion de fenomenos que repercuten en la textura, el autor, que es un especialista entre otros temas de la oxidacion de los lipidos de la carne, desarrolla de manera particular los mecanismos de estas reacciones de oxidacion durante la congelacion y las importantes consecuencias (ya que pueden ser causa de rechazo por parte del consumidor) que pueden tener sobre el flavor y el color del producto final. Finalmente, los aspectos practicos en la preservacion de la calidad de carnes congeladas van a permitir al lector, centrado en este contexto, obtener una gran utilidad de este libro. |
