| Summary, etc. | La colección Cuadernos Value recoge los resultados de diferentes proyectos de investigación referidos al sector agro-alimentario, desarrollados por equipos altamente cualificados en el marco de los programas de investigación de la Unión Europea. Es una oferta editorial dirigida específicamente a técnicos y profesionales del sector que pretende presentar diligentemente dichos resultados. En este segundo número se presentan los resultados obtenidos en el Proyecto ECLAIR sobre la mejora de las aptitudes de almacenamiento de frutas frescas a través del control biotecnológico y técnico del etileno. Las técnicas experimentales permiten retrasar la maduración de los frutos, al tiempo que mantener su calidad durante largos períodos de almacenaje, reduciendo o eliminando los tratamientos fúngicos y los agentes antiescaldado cuyos residuos retienen los frutos y en última instancia producen efectos perniciosos sobre la salud de las personas que los ingieren. |
