| Summary, etc. | La microbiología de alimentos es una asignatura de vital importancia para el ingeniero de alimentos con la cual podrá definir estrategias de higiene e inocuidad en las plantas de alimentos, ya que en ella se definen las características bioquímicas y, morfológicas de los microorganismos que alteran y contaminan los alimentos, así como también los daños que estos causan y como pueden afectar la salud del consumidor.<br/><br/> Con el conocimiento de la microbiología de los alimentos el ingeniero de alimentos podrá entender y establecer pautas para el control de calidad de los alimentos, por lo cual podrá definir parámetros de calidad para materias primas, producto en proceso y producto terminado. |
