| Summary, etc. | En este libro se abordan los conceptos claves de calidad y seguridad alimentaria, entendiendo la calidad no como algo aislado sino como un sistema de gestión global con las principales herramientas, normas y modelos de gestión de la calidad existentes en la actualidad, así como las diferentes certificaciones y organismos nacionales e internacionales que impulsan y promueven la importancia de la aplicación de un sistema de calidad necesario para mejorar la competitividad de la empresa. Por ello, es necesaria una política de seguridad alimentaria común y el establecimiento de los mecanismos de alerta alimentaria ante los posibles peligros alimentarios que pueden surgir. De ahí la importancia de la aplicación de los sistemas de autocontrol (APPCC) y de unas buenas prácticas higiénicas por parte del manipulador de alimentos, así como una correcta limpieza y desinfección de equipos e instalaciones, control de plagas y adecuada gestión de los residuos. |
