La carne de cuy se caracteriza por su alto contenido nutricional, siendo un alimento susceptible a ataques de diversos tipos de microorganismos patógenos que causan su deterioro en periodos relativamente cortos; el objetivo principal es evaluar el efecto : preservante de los aceites esenciales de orégano y perejil en la conservación de carne de cuy empacado al vacío en polipropileno. |
