| Summary, etc. | El presente trabajo de investigación se desarrolló con el objetivo de formular un alimento extruido rico eri hierro que prevenga la anemia por deficiencia de hierro y además que sea de calidad aceptable, para niños de 3 a 5 años. Se realizó a partir de una mezcla base de harina de tarwi 20%, grits de kiwicha 33.91 % y grits de maíz 46.09%. Se trabajó con tres concentraciones de bazo bovino 0% ,,, muestra control, 5% y 10%, con una humedad de 15% y 18% a temperatura de 180ºC, con relación de compresión 4:1, a 1200 rpm, obteniéndose seis tratamientos (TI, T2, T3, T4, T5, T6). |
